15 Stamford by Alvin Leung, a great Asian bistro & grill restaurant in Singapore, operates within The Capitol Kempinski Hotel Singapore (15 Stamford Road).
The high-end restaurant, open to customers since December 2018 and with seating available for up to 150 guests, is a showcase for Two Michelin-starred celebrity Chef Alvin Leung’s favourite Asian recipes.
Each of the recipes has been inspired by Leung’s travels around Asia, particularly taking notes and recreating classics from the cuisines of the Philippines, South Korea, Thailand, Malaysia, Hong Kong, and Singapore.
Visiting the restaurant, the menus include Sunday Brunch Menu, À la Carte Menu, Lunch Set Menu, Dinner Set Menu, Steak Menu, Wine List, Beverage List, as well as Chinese Tea List.
Among the Chef’s Signatures in the A La Carte Menu are, for example, Yellowfin Tuna Akami Asian Ceviche (nori pie tee, furikake, gochujang dressing), Three-Style Corn Salad (heirloom tomato, pat chun vinaigrette)…

In terms of ambience, centrepiece of the Asian restaurant is the open kitchen, featuring a hot coal grill where delicious meats and seafood are chargrilled to perfection throughout the week.
For decor, the luxurious atmosphere is created by the dark wooden walls punctuated by the occasional Victorian and art deco details inspired by the original buildings Stamford House and Capitol Building, evoking the golden age of Victorian style with hints of oriental touches.
Additionally, Chef Alvin Leung, who has a nickname ‘Demon Chef’ (a reputation from his MasterChef Canada appearances), has incorporated his signature demon logo into the restaurant motifs, including the crockery.
