BBR by Alain Ducasse, a great Mediterranean restaurant in Singapore, operates at Raffles Singapore (1 Beach Road, next to the main building).
The restaurant is housed in a historic location, the hotel’s Bar & Billiard Room (BBR), which has a culinary heritage since 1896, starting as a club during British colonial rule.
Today, the place features a Mediterranean concept by Alain Ducasse, one of the world’s most celebrated chefs, continuing to be a social gathering space where the dining experience is accompanied by a lively bar scene.
Chef Ducasse has created a modern menu with his favourite flavours from the Mediterranean in sharing plates and regular-sized dishes, featuring the essence of cuisines from Portugal, Spain, Italy, and France.
Pulpo a la Gallega.
Signature dishes on the menu include, for example, Pulpo a la Gallega (starter – fork tender octopus paired with baby potatoes, dusted with smoky paprika and olive oil), Lomo a la Brasa – Mojo Verde (BBQ striploin steak, green sweet bell pepper sauce), and Cataplana de Marisco (carabineros shrimp & shellfish stew).
Tiger Story.
In 1902, a tiger in Singapore that escaped from a circus was shot underneath the Bar and Billiard Room. This tale has inspired one of the trademark menu items, Tiger Story, a vanilla entremets / dessert.
