Esora, a kappo-style fine dining Japanese restaurant in Singapore, is located within River Valley area, at 15 Mohamed Sultan Road.
Created in 2018 by The Lo & Behold Group in co-operation with Chef Shigeru Koizumi, the kappo-style outlet offers less formal modern cuisine in an environment that emphasizes the proximity between the diner and the chef.
Set in a beautiful heritage shophouse, the place showcases the founders’ affinity for nature & attention to detail, for an emotive and imaginative dining experience that resonates beyond the dining table, where the chefs are storytellers and every meal is an intimate tale of nostalgia and seasonality.
Examples from the past menus at Esora, which translates as ‘painting in the sky’ from Japanese, are the likes of Kegani Crab Donabe (Japanese hairy crab, Shanghainese hairy crab roe, negi, ginger) and Ōmi Wagyu (Ōmi beef, white maitake mushroom puree, grilled maitake mushrooms, akazu (aged red vinegar), wasabi, sea salt).
Ōmi Wagyu.
You can also pair the food with a teas from the dedicated tea-pairing programme, featuring a selection that is an elegant expression of nature’s essence, and an ode to the people who have dedicated themselves to the perfect brew.
Overall, the Japanese restaurant is a warm and welcoming space of natural materials – plaster, timber and stone on the surfaces with touches of marble and copper for a more contemporary edge – where the chef-guest relationship is always at the forefront.
The main counter has been placed below a skylight dressed in Japanese washi paper – a centrepiece feature that, in addition to being a reflection on the 26-seater restaurant’s name, is also a tribute to Chef Koizumi’s love for the sky, stemming from a childhood growing up surrounded by nature.
