The rainforest-themed fine dining restaurant, a serene experience with a forest canopy-inspired high ceiling that is helmed by celebrity Chef Sam Leong, offers a modern, colourful Chinese cuisine menu.
Menu highlights include, for example, dishes like Tiger Prawn Rice Vermicelli with Chinese Wine in Superior Chicken Broth, Pan-seared Lemongrass Chicken Roll stuffed with Glutinous Rice, Ah Sam Abalone Mee Sua, and many others.
Part of the culinary journey at the fine dining restaurant, where the name comes from Chef Sam Leong’s wife, Forest Leong, are the delicious Chinese desserts (created by Sam Leong’s son Joe), like black sesame molten lava cake (with a nutty sesame filling), topped with black sesame crumble and a scoop of black sesame ice cream.
As the interiors feature two sides with large glass panels (overlooking the lawn of the hotel), the restaurant plenty of sunlight during the day, with the atmosphere transforming towards the evening into a more intimate setting.
The restaurant also has two private dining rooms (reservable in advance), which seat up to 10 people, and are suitable for business lunches or special celebrations.
