The restaurant name, where ‘Hajime’ is the Japanese word for ‘beginning’ (初め) and a short form of ‘Hajimemashite’, meaning ‘nice to meet you’ in English, represents a philosophy of going back to the food’s beginning and a warm welcome to all patrons.
