The Japanese restaurant serves a menu of traditional Japanese Sushi, Sashimi & cooked dishes, with specialty area being delicious aged sushi & sashimi – a lost technique that very few chefs still learn and preserve.
For the meals, the outlet uses only high end produce that has been sourced directly from famed Japanese seafood markets (especially Toyosu fish market) four times a week.
To maintain the freshness of the fishes, the chefs utilize traditional Japanese techniques Ikejime, Shinkenuki or Kori-jime, where the nerves in the fish are removed or the bleeding is stopped.
On the menu, some fishes need to be aged while others do not, and the fish are served both fresh and aged depending on type of fish. If aged, the fish is aged for a few days to break down the protein to balance the taste and draw out the full flavours.
