Founded by ramen master Masamichi Miyazawa in 1984 in Kyoto, Japan, and in Singapore since November 2020, the chain is best known for their dramatic flaming of the signature dish as a final step in the preparation.
The Fire Ramen, a signature original ramen with light broth and green onions, is poured with Kujo-Negi oil that is lit to fire, creating the memorable culinary moment that attracts locals and tourists alike to the outlet.
However, the flaming of the oil just before eating is not part of the process just for creating drama, but it also brings out the flavour and the aroma of the green onions.
Protection of customers from the flames is important to the restaurant, which is why you’ll be given an apron and security instructions where to keep your hands before the big moment.
There is also a specially-installed exhaust that will draw the massive flames away from the direction of diners.
For the meal, to complement the original recipe from Kyoto, Menbaka sources their delicious made-to-order noodles from Singaporean factory sources, plus the green onions are locally farmed.
