The soul of the nourishing soup comes from the fish’s gelatinous belly fat, pork bones and chicken, which after hours of boiling, skimming and reducing, distills into a creamy consistency with a delicate and sweet flavour.
Furthermore, the milky emulsion and sweet taste eliminate the need for any added milk, keeping it accessible to people with dairy sensitivities. A tomato soup base is also available.
