Each of the outlets, the first of which opened its doors in 2021, seeks to combine Singaporeans’ love for hawker-style seafood soup with a comfortable dining environment.

The focus on the menu is on slow-brewed seafood soup, prepared from premium ingredients in collaboration with Singaporean all-natural collagen broth brand – Áo Broth.

Overall inspiration for the soup comes from milkfish, a popular culinary fish in Taiwan and the Philippines, a choice that is also a commitment to offering an authentic seafood soup.

The soul of the nourishing soup comes from the fish’s gelatinous belly fat, pork bones and chicken, which after hours of boiling, skimming and reducing, distills into a creamy consistency with a delicate and sweet flavour.

Furthermore, the milky emulsion and sweet taste eliminate the need for any added milk, keeping it accessible to people with dairy sensitivities. A tomato soup base is also available.
