Papa Doble Restaurant and Bar in Singapore operates within Chinatown district, at 55 Keong Saik Road.
Created by Andrew Yap, the outlet takes its name from the nickname of Ernest Hemingway in Cuba (“Papa”) and his preference for a special double rum daiquiri without sugar.
The intimate speakeasy honours and takes inspiration from Hemingway in many ways, from the author’s novels, history, and love for bullfighting & folklore.
Visiting the restaurant & bar, you can experience gourmet delights with mediterranean flavours and innovative cocktails that pair perfectly together, re-creating some of the memories associated with Hemingway’s journeys.
Beyond the Signature Papa Doble cocktail (Bacardi Carta Blanca, homogenized peppers, ananas), the drinks menu features the likes of Papa’s Negroni (Bombay Sapphire gin, Campari and Mancino vermouth), as well as Bahamas (Bacardi Carta Blanca, Giffard coconut, clarified ananas, lime, coco aqua).
Highlights on the restaurant & bar dine-in food menu include, meanwhile, Roasted Chicken Drumlets, Pulled Pork Burger, Argentinian Beef Tenderloin Bites, and Glazed Iberico Char Siew.
