In preparing the dishes, the restaurant draws inspiration from the deep historical roots Italian pasta and pasta making have – the traditions and regionality, as well as the heritage recipes and techniques.

Each and every one of the restaurant’s pasta shapes is handmade daily using a variety of semolina and ’00’ flours combined with whole eggs, egg yolks, and water or a varying combination of these ingredients depending on the required texture, bite and intended use of the pasta.
