Shimbashi Soba Japanese restaurant, a great place to enjoy buckwheat noodles in Singapore, is located within Paragon shopping centre, at 290 Orchard Road.
Opened in 2003 and managed by RE&S restaurant group, the restaurant is a wonderful destination to discover the art of authentic Soba noodles.
The restaurant’s buckwheat (soba) noodles are first milled and ground into flour, then skillfully shaped by hand into fine stands of noodles by their Soba Chefs at the restaurant on a daily basis.
The soba, made from Tasmanian (Australian) buckwheat flour that has a wonderful, rich fragrance, is milled only in the right amount needed for each day, so it is always served fresh.
Kneading and slicing are important steps in producing freshly-made Soba that not only it has the right length and thickness, but also the characteristically crisp, solid taste and consistent texture.
The noodle restaurant‘s mastery goes all the way into the final process of “throwing” the soba into boiling water, then removing it once cooked and dipping it into chilled water, which is when the true skill of the Soba master is put to the test – the moment when the taste truly comes alive.
Many consider buckwheat noodles a wonder food, as it is low in calories with the added bonus of lowering blood pressure and aiding digestion.
