Shinkansen Japanese salad bar has two locations in Singapore, one at 100 AM shopping centre (100 Tras Street) and another within Ocean Financial Centre (10 Collyer Quay). (UPDATE 2020: THE OUTLETS HAVE CLOSED)
Operating with the slogan “Lunch On The Fast Track”, Shinkansen offers Japanese-style protein containing salad bowls.
You can either choose one of the artfully crafted signature bowls, or create your own delicious & healthy meal.
If you choose to make your own customized salad bowl, you’ll first choose the size of the meal, base (Sushi Rice, Brown Rice, Mixed Greens, Soba Noodles), toppings (Alfalfa Sprouts, Broccoli, Carrots, Celery, Cucumber, Mushrooms, Red Onions, Sweet Corns, Almond Flakes, Croutons, Pine Nuts, Raisins, Brown Rice, Pasta, Kidney Bean, Boiled Egg, Cherry Tomatoes, Black Olives, Pickled Seaweed, Tamago, and Mixed Bell Peppers)…
…add-ons (Apricots, Dried Blueberries, Avocado, Feta Cheese, Quinoa, Sundried Tomatoes, Cashew Nuts, Parmesan Cheese, Bacon Bits, Swiss Cheese, Baby Potatoes), meats (Prawns, Smoked Duck, Smoked Salmon, Tuna, Parma Ham, Teriyaki Chicken, Honey Baked Ham, Salmon Sashimi, Tuna Sashimi, Yellowtail Sashimi)…
…and finally, the sauce (French, Italian, Ranch, Extra Virgin Olive Oil, Citrus, Lemon Juice, Balsamic Vinaigrette, Yuzu Mayo, Sweet Thai Chili, Honey Mustard, Caesar, Thousand Island, Blue Cheese, Sesame Plum, Sesame Onion, Miso).
The Shinkansen signature bowls on the menu, meanwhile, are Shin-Kobe (yakiniku Steak, onsen egg, steamed broccoli, sweet corn, baby spinach, romaine and butterhead lettuce, mixed grain sushi rice, and ginger balsamic sauce), Okayama (maple & genmaicha Cured Salmon, onsen egg, steamed broccoli, sweet corn, baby spinach, romaine and butterhead lettuce, soba noodles, and wafu dressing)…
…Mie (yakiniku Steak, sweet corn, toasted walnuts, plum momotaro tomato, baby spinach, romaine and butterhead lettuce, cherry tomato, and whole grain miso honey mustard), Shin-Osaka (yuzu-honey Roast Chicken, steamed broccoli, mushroom, sweet corn, baby spinach, romaine and butterhead lettuce, soba noodles, and wafu dressing)…

Separately, you can also order sushi sets and sashimi as your meal.
In addition to going to either one of the locations, you can also order the food to your home, office, etc., as Shinkansen also has deliveries available to most parts of Singapore.
