The restaurant, established by Nobukatsu Shibuya in Tokyo’s Ginza district in 1927, specializes in Japanese tonkatsu – breaded, deep-fried pork cutlet – dishes, using heritage recipes that have been passed from generation to generation.
Within tonkatsu restaurants, Ginza Bairin has been one of the most creative establishments, not only being the first Tonkatsu restaurant in Ginza when it opened, but also innovating the now popular bite-sized Katsu (Hitokuchi Katsu), Tonkatsu sauces, and the Katsu Sandwich.
One of the specialties Ginza Bairin is known for is their dishes utilizing the authentic Kurobuta (Black Pig), a special breed of pig, ingredient that is freshly from Kagoshima, Japan, to the restaurant.
