A fine dining concept created by Raffles Hotel in co-operation with Celebrity MasterChef Jereme Leung, the restaurant delivers cuisine that takes you on an exploration voyage to China’s diverse cultural regions.

藝 yì, which stands for art in the Chinese language, offers artistic adaptations of China’s provincial cuisines, everything from Cantonese classics to takes on China’s ancient delicacies, prepared using single sourced and seasonal ingredients with a contemporary approach.

Signature dishes include Hundred-ring Cucumber with Poached Sea Whelk, Braised Beef Cheeks Tendon Ox Tail with Sorghum Grains, Golden Roasted Duck with Rose & Fermented Bean Sauce and Rainbow Pancakes, as well as Luffa Melon & Pig’s Stomach in Peppercorn Broth.

Of the signatures, Hundred-ring Cucumber with Sea Whelk, as an example, is a classic dish found in China’s Northern region during warm summer months, made at the restaurant skillfully sliced and served with vinaigrette and sea whelk.

To complement the meals, Chef Jereme Leung encourages guests to pair their meals with a bottle of wine or a cocktail, together with his signature drinking snacks.

In terms of ambience, the 111-seat Chinese restaurant amidst the colonial architecture features highlights of modern sophisticated detailing and a beautiful soft white palette, celebrating the art of storytelling and modernity.

More specifically, the interior design has been inspired by the ancient Chinese myth portraying the creation of Heaven and Earth by the god Pangu.

Elements of ‘Heaven’ in the main dining hall are incorporated through white creped fixtures symbolising a blanket of clouds, while soft blue pastels and warm beige accents reflecting the elements of ‘Earth’.
